Laura Murray's Plummy Cookies

Ingredients:

1 1/4 c. all-purpose flour
3/4 tsp. salt
1/2 tsp. baking powder
1/2 c. butter at room temperature (1 stick of butter)
1/2 c. of sugar
1 egg
1 tsp. vanilla
1/4 c. finely chopped dark raisins
1/4 c. finely chopped pitted dates
1/4 c. finely chopped pecans
1 T. plum jam
colored decorating sugar
3 T. melted butter

 

Instructions:


1. Combine flour, salt and baking powder in a bowl. Beat together butter, sugar, egg and vanilla in small bowl until light and fluffy. Stir in flour misture. Flatten dough into disk; wrap in plactic and refrigerate 1 hour or freeze for 30 minutes.
2. Meanwhile combine raisins, dates, pecans and jam in a bowl.
3. Break off rounded measuring teaspoons of dough. With floured hands, roll into 3/4 inch balls. Make indentation in center of each ball. Spoon about 1/4 teaspoon raisin mixture into center of each ball. Pinch dough closed, reshaping with filling in the center. Place on greased baking sheets. Refrigerate for 1 hour.
4. Bake in pre-heated 350 degree oven for 12 minutes. Remove cookies to wire rack. Divide collored sugars into bowls. While cookies are still warm, brush with melted butter; roll in colored sugar. Cool on rack.

Bake: at 350 degrees for 12 minutes.
Yield: 3 dozen cookies.
